A Simple Kitchen Experiment With Surprising Results

Researchers at the University of Alabama and Baylor College of Medicine wanted to know whether two common spices could do more than season food. Their study tested cinnamon and ginger as a way to actively feed beneficial bacteria in the gut.

The trial recruited 25 women with an average age of around 58. Twice a day for four weeks, they ate yogurt containing a culinary dose of cinnamon and ginger, then switched to plain yogurt for four weeks with a two-week break in between. Researchers analyzed stool and blood samples throughout.

Yogurt served as the base because it already supports gut health on its own. The goal was to see whether the spices added something extra on top.


What Changed in the Gut

The overall composition of the participants' gut bacteria did not shift dramatically. But three specific bacterial groups increased: Alistipes, Roseburia, and members of the Ruminococcaceae family. All three are known producers of short-chain fatty acids, compounds made when bacteria ferment fiber and plant compounds in the colon.

The published findings, presented in the journal Nutrition Reviews, reported that acetate production rose by 24 percent and butyrate by 19 percent among participants during the spice phase. Butyrate in particular is tied to healthier blood sugar regulation and to maintaining the lining of the colon.

The increase in these bacteria was also linked to a rise in peptide YY, a gut hormone that curbs appetite and slows digestion. Notably, peptide YY levels remained elevated even after the spice-enriched yogurt phase had ended, suggesting the effect outlasted the intervention itself.

Beyond digestion, the researchers also tracked broader markers of metabolic health. Serum leptin, a hormone tied to satiety, rose by roughly 30 percent, and the ratio of total cholesterol to HDL cholesterol dropped by about 4.4 percent over the four-week period.

It's worth noting the study was funded by the McCormick Science Institute, a research arm connected to the spice industry — a detail worth keeping in mind when weighing how far these early results can be generalized.


Who Stands to Benefit Most

Nutrition experts not involved in the trial say the approach is most likely to help people with mild, everyday digestive complaints rather than those with diagnosed gastrointestinal disease. That includes people recovering from a course of antibiotics, since these medications wipe out helpful bacteria along with harmful ones, and older adults focused on general gut maintenance, since digestive issues become more common with age.

People dealing with occasional bloating, gas, or irregularity — without a formal diagnosis — may also notice a difference. Because both spices have mild anti-inflammatory properties, they could offer modest support for people with low-grade inflammation as well.


The Bigger Picture: Fiber Still Comes First

Spices are a bonus, not a substitute for the basics of gut health. According to Harvard Health, the bacteria in a healthy gut thrive on fiber, which they break down into short-chain fatty acids that make the colon less hospitable to harmful microorganisms. Whole grains, beans, vegetables, and fruit are considered reliable, well-studied prebiotic sources — arguably a bigger lever for gut health than any single spice.

Fermented, probiotic-rich foods add live bacteria directly to the mix. Yogurt and kefir, sauerkraut, kimchi, miso, and naturally fermented pickles all fall into this category and pair naturally with the kind of spice-forward approach tested in the new trial.


A Word of Caution Before Reaching for the Spice Rack

Spices are not risk-free in large amounts. Ginger, turmeric, and cayenne all have mild blood-thinning properties, which can matter for anyone taking anticoagulant medication or other prescription drugs — a doctor or pharmacist should be consulted before making spices a daily habit.

Cinnamon carries a more specific caveat. The inexpensive cassia variety sold in most supermarkets contains far more coumarin, a compound that can stress the liver in high doses, than Ceylon cinnamon, often labeled "true cinnamon." According to Germany's Federal Institute for Risk Assessment (BfR), Ceylon cinnamon contains only low levels of coumarin that are considered safe, while consumers using cassia-based supplements should be aware such products may contain much higher quantities. The institute recommends moderate consumption of cassia cinnamon in particular.

Coumarin sensitivity is also higher in children, pregnant or breastfeeding women, and people with existing liver conditions. For daily use over weeks, choosing Ceylon over cassia is the safer bet.


Outlook

The trial was small and short, and its authors are careful to describe the results as preliminary rather than conclusive. Still, the underlying idea — that inexpensive, widely available spices can nudge the gut microbiome toward a healthier state — is drawing growing scientific interest as researchers look for low-cost, food-first tools to support metabolic health. Larger and longer trials will be needed to confirm whether the effects hold up over time and across more diverse populations.
